Amino acid analysis
We analyze amino acids and quantify them to enhance the added value of products.
At the Japan Food Function Analysis Institute, we analyze amino acids. Proteins are well-known as one of the three major nutrients alongside carbohydrates and lipids, and amino acids are the building blocks of these proteins. Additionally, amino acids such as glutamic acid are components that contribute to the umami flavor in food. By analyzing and quantifying these amino acids, which are essential for flavor and health maintenance, we enhance the added value of products. Using high-performance liquid chromatography, we will promptly report analysis results in accordance with official methods (Food Sanitation Inspection Guidelines). [We respond to requests such as the following] ■ I want to know the amino acid content in soy sauce and compare it with products from other companies. ■ I want to investigate the amino acid content in mandarins and differentiate it from other regions and varieties. ■ I want to find suitable conditions for meat aging. *For more details, please refer to the PDF materials or feel free to contact us.
